Red Velvet Cheesecake-Vanilla Cake with Cream Cheese Frosting
If you’re looking for a cake that is a true labor of love, I found the one for you. I completely dropped the ball for Tom’s birthday a couple weeks ago and only got him a card, so I decided to surprise him with a homemade cake when he got home from a week-long work trip. He loves red velvet cake so I knew exactly which one I wanted to make. Red velvet cakes make frequent appearances in Southern Living Magazine, so I decided to try my hand at the red velvet cheesecake-vanilla cake with cream cheese frosting. I don’t think I’ve ever cooked something with so many steps (or so much cream cheese), but the end result was beautiful and extremely decadent. Now, this is not something you’ll want to eat if you’re trying to cut calories, but this cake would be great for a fancy Christmas party or if you have a red velvet cheesecake lover in your family.
The dress I’m wearing is one of my favorites from Madison Mathews, a small clothing company I discovered in Charleston a couple years ago. This color isn’t available anymore but I think I need this navy and white one.
