On My Mind…Lately

Hooray, it’s Friday!  Sorry I haven’t been very consistent with my Friday posts (or any posts for that matter…).  It seems like lately I’m always either distracted, uninspired, or busy…3 poor excuses that keep me from focusing on maintaining the blog as I should.  I’ll try to be better, but who knows what it’ll be like once this baby boy arrives in November!  

As for things that have been on my mind lately, it’s mostly been baby baby baby all the time.  So far we have most of the nursery set up, I just have a few more things on my to do list that we need to check off.  Thankfully it has come together really quickly because I had such a detailed plan in my head and typed out on my computer.  I’m such a list maker, so once it came time to start work on the nursery I knew everything I wanted to include (that we already owned) and had already selected the few things we needed to purchase.

Ok, so enough rambling.  Here are the top 5 things that have been on my mind or caught my eye lately!

1.  Pumpkin-Chocolate Brownies.  

It’s fall y’all, which means PUMPKIN EVERYTHING!  I haven’t jumped on the pumpkin bandwagon quite yet this year (It’ll come soon I’m sure…it’s just still so hot outside here!), but these pumpkin-chocolate brownies look amazing.

2.  Twice Baked Lentil Shepherd’s Pie Potatoes.  

I haven’t made this recipe yet, but it looks absolutely delicious.  I have always LOVED shepherd’s pie.  I don’t know why, but gosh I love it so much.  I also love twice baked potatoes…so this right here looks like a healthier hybrid of these two comfort food favorites!  Perfect for a cool fall evening.  I can’t wait to try out this recipe by Sarah of Making Thyme for Health!

3.  Baby Vail’s Nursery.

Do you follow me on Instagram or Facebook?  (If not, you should!)  If you do, then you’ve seen the few peeks of the nursery that I’ve shared recently.  I took this photo Tuesday morning after I hung up the gallery wall the night before.  I still have to add one thing in the bottom left corner, but I really love how everything is coming together!  I’ll share a detailed post with sources soon, I promise! 

4.  2016 Kate Spade Planners.

Do you use a planner to keep organized?  I love planners and the cute ones from Kate Spade are my favorite!  The 17-month 2016 planners run from August 2015 to December 2016, and even though I have a few months left in my 2015 planner I would love to get this 2016 one.  Isn’t it adorable?

5.  Wooden Wheeled Animal Toys.

How cute is this wooden crab on wheels?  I bought the crab and the cod fish from ArkAndAnimals on Etsy last week and they look really cute in the nursery.  Tom made fun of them because he said animals don’t have wheels and our baby is going to be the weird kid who doesn’t realize fish don’t have wheels until he goes fishing for the first time…but I think they are darling.  Plus they are only $5.85 a piece!

    What a great list! Those brownies look delicious and I don't think you can go wrong with pumpkin and chocolate. I used to love shepherd's pie, but I gave up eating red meat so I will definitely try this recipe and I'm looking forward to checking out that blog, too. The wooden toys are adorable! I've been trying to avoid buying any more plastic and to buy more and more from Etsy rather than chain stores so I will add that shop to my favorites. Saw the nursery on IG. It's wonderful. Can't wait to (virtually) meet your little guy. Hope you are feeling well.
